These recipes emerged out of a five-year period spent in Nepal
by the author. There are dishes from the Northern Tibeto-Mongolian
rradition and others from the more Indianised Southern Terai
region. The author discovered that Nepalis have a tradional of
health food. This little-known cuisine is a great discovery for
people from outside Nepal.
Lets's look at one the great recipes in this book - Pineapple
koftas (or pineapple chops):
PINEAPPLE KOFTAS
Ingredients
One medium-sized pineapple
One large onion
Half a cup each of green chillis (optional) and sesame seeds
One large potato
Half a teaspoon of salt and red chilli powder (optional)
Two cups of oil
Method
1. Chop up the fresh pineapple finely (tinned pineapple is normally
too sweet and soggy) and mix in salt.
2. Cook in a saucepan, having added a bit of water until done.
3. Cut and boil potato, either in its jacket or peeled.
4. Mince chillis and mix with mashed potato, sesame, pineapple
and spices. Knead well and form into small kofta (chops).
5. Heat oil in a skillet and fry the koftas in the deep oil for
about 15 minutes.
Serving Suggestions
They can be served either hot or cold, with or without a sauce.
Chutney woud also be suitable for the koftas, especially as a
compliment to the pineapple used in this dish. |
